Saint-Joseph Lieu-dit Digue Blanc by Yves Cuilleron comes from a very steep, south-facing slope in Saint-Pierre-de-Boeuf with poor granite and pale migmatite soils. The single parcel is planted solely with Roussanne; the grapes are hand harvested, fermented with native yeasts and aged for several months on lees in oak. The nose offers white flowers, fresh citrus, yellow apple and stone fruit with a hint of honey. On the palate Digue is full-bodied yet taut, showing creamy texture, juicy fruit and lively, mineral-driven acidity. A touch of salinity and discreet oak bring depth and a long, gently spicy finish. A characterful Northern Rhône white that pairs beautifully with fine fish, shellfish, poultry in light sauces or aged goats’ cheeses.
