Domaine du Bouchot Pouilly-Fumé Caillottes is sourced from poor, limestone pebble soils known as “caillottes” and offers an especially cool, precise expression of Sauvignon Blanc. The bouquet combines citrus fruit, green apple and white flowers with a delicate salty minerality and a hint of flint. On the palate the wine is taut and linear, driven by lively acidity, pure fruit and an almost maritime impression. The texture is crystalline and full of tension while remaining finely balanced. The finish lingers with notes of citrus, chalk and subtle herbs. A very vibrant Pouilly-Fumé that pairs beautifully with oysters, seafood, goat’s cheese and light fish dishes.
