| This Riesling Spätlese from Willi Schaefer comes from the renowned steep Graacher Domprobst vineyard on the Mosel, dominated by weathered slate. The family cultivates old Riesling vines here and ferments the musts in traditional Fuder casks with natural yeasts. On the nose you find yellow peach, apricot and green apple together with gentle herbal spice, floral notes and a faint smokiness. On the palate the Spätlese is slender, juicy and finely knit, showing a precise balance of sweetness and acidity and very pure fruit. Minerality from the Domprobst hill brings cool tension and a long, delicately salty finish. A classic, playful Mosel Riesling that pairs beautifully with Asian dishes, light fish or tangy goat’s cheese. | |
