In Reims, the story of Pommery begins in 1836, yet its true drama was written by Madame Pommery: she took the helm in 1858 and, in 1874, launched Pommery Nature—the first commercially successful Brut against an era of sweetness.
In 1868 she turned chalk quarries into an underground empire: some 18 kilometres of crayères, 30 metres below ground, becoming the cool backbone for tirage, slow ageing sur lie and the patience of autolysis. From Chardonnay, Pinot Noir and Pinot Meunier the classic cuvée is assembled; precision lives in village selection and in a dosage that reveals freshness rather than masking it.
