The base wines come from Pannonian‑ripened fruit—Grüner Veltliner, Welschriesling and Pinot varieties—vinified deliberately as individual voices, with grapes sourced from selected contract growers across the region. After tirage, the second fermentation unfolds in bottle, followed by extended ageing sur lie, remuage, and disgorgement when the mousseux has reached its intended calm; dosage is conceived as style, not decoration.
