At the foot of Mt. Daisen in Japan, in Kurayoshi, Tottori, The Kurayoshi represents Matsui Shuzo’s whisky ambition. The company was founded in 1910, secured a whisky licence in 2015, and began serious in‑house distillation in 2017 with three copper pot stills—small scale, meticulous intent.

The heart of the style is water: spring water filtered through volcanic strata around Daisen, paired with a Sea of Japan climate that swings in temperature and gives maturation a noticeable pulse. Casks do the rest—bourbon and sherry wood as the backbone, sometimes joined by a Japanese accent such as Mizunara—before careful marrying brings cohesion. Rather than shouting, it settles in: a composed Japanese whisky that carries the landscape in its texture, finishing as a calm, persistent warmth, quietly.
