From the Prosecco hills of Veneto, in the orbit of Conegliano‑Valdobbiadene, Astoria has shaped the Polegato family’s style since 1987—and carries it into grappa as well. For this house, marc is not leftovers: it’s the grape’s second chapter.
For “Croder”, pomace comes mainly from red varieties such as Cabernet, Merlot and Marzemino from the Colli di Conegliano DOCG. After an extended maceration in the base wine, it is worked immediately after pressing to keep the material vivid and clean. Distillation is slow and discontinuous, using a gentle bagnomaria water‑bath, with careful fractioning run by run.
The new spirit then rests for more than a year in French oak barriques. Barrel aging adds depth without masking the winery’s signature: a precise, artisanal grappa that speaks Veneto in a modern, refined accent.Astoria
