Just beside the misty mornings of the Ciron, a dry white takes shape at Château Guiraud in Bordeaux: G de Guiraud. Classified Premier Cru in 1855, the estate thinks in decades, pairing technical precision with a long-standing focus on biodiversity and organic farming.

From selected parcels of Sémillon and Sauvignon Blanc, picked at full phenolic ripeness, the must is handled gently. Fermentation is shared between stainless steel and seasoned barrels once used at the château; a partial malolactic and six months of ageing on lees refine the texture while keeping the line bright and clear.

The result is Sauternes’ terroir told in a dry register: taut, mineral and composed, carrying the calm authority of a great site and the discreet polish of élevage, without ever turning heavy.
