Around southern Siena, hillside parcels on calcareous and clay soils, with altitude and cool night shifts, shape ripening; picking is selective so each site can speak with clarity.
In the cellar, fermentation is managed with precision—sometimes with native yeasts—followed by a patient élevage in wood and bottle that supports, rather than masks, origin. Gentle bâtonnage and time on fine lees are used when it fits the cuvée, always with a restrained hand on new oak. Alongside classic Tuscan varieties, Vin Santo is a signature chapter: long ageing in small casks, guided by the unique microclimate of the cantina.
