Vino Nobile di Montepulciano by Innocenti is based on Sangiovese, known locally as Prugnolo Gentile, grown on rolling hills around Montepulciano. The vineyards sit on clay and limestone soils and are worked in a traditional manner. The bouquet reveals dark cherry, plum, dried herbs, violet, tea and warm spice. On the palate the wine is dense and savoury yet refined, with firm but ripe tannins and lively acidity. Ageing in large oak casks adds notes of tobacco, leather and gentle toast while preserving the fruit. The finish is dry, slightly balsamic and long. A classic Nobile for game, lamb, slow cooked beef and aged Pecorino.
