Giefing
In the free town of Rust, Weingut Giefing ties past to present with rare ease. On the western shore of Lake Neusiedl, limestone and clay-limestone slopes meet lake air and sunlight. The estate works from a 15th‑century “Freihof” in the UNESCO-protected old centre—old stone, modern intent.
Lake influence brings humidity and light into a delicate balance. For Ruster Ausbruch DAC—officially recognised since 2017—that means the slow choreography of botrytis and late harvest: patient picking, gentle pressing and cool, extended fermentations, then élevage in cask to settle the wine into harmony.
Giefing treats terroir as the craft of time itself, shaping wines through restraint rather than spectacle. What remains is Rust in a precise register: layered, composed and carrying a discreet sense of grandeur.Giefing
