Haut Bailly II is the refined second wine of the renowned estate in Pessac Leognan, combining delicacy with depth. The bouquet reveals dark cherry, cassis, ripe plum and hints of tobacco, cedar and graphite. On the palate it feels silky and concentrated, framed by fine grained tannins and refreshing, well integrated acidity. Juicy fruit is layered with spicy notes and a touch of dried herbs that add complexity. The finish is long and persistent, echoing blackcurrant and subtle oak. This wine pairs beautifully with braised meats, grilled beef or mature hard cheeses. With a little time in the cellar it gains even more nuance and polish.
