Work in the rows is uncompromising: parcel-by-parcel picking, careful canopy management and modest yields so Sauvignon Blanc and local varieties speak in a clear dialect of place. In the cellar, restraint rules – gentle pressing, partial native-yeast fermentations and an extended stay sur lie, depending on the cuvée in stainless steel or large, neutral oak.
