The farmed surface is around 27 hectares, cultivated with organic principles and a practical respect for biodiversity: Guyot pruning, spontaneous cover crops, careful yields and harvest timing that follows exposure and altitude. Fermentations can proceed with indigenous yeasts, keeping the imprint of each parcel intact.
In the cellar, technology serves restraint: gentle pressing, measured extraction, and ageing calibrated between large casks, barrique and steel.
