Limestone and marl set the tone, so work is relentlessly parcel-driven—hand harvesting, separate fermentations by climat, then a measured élevage in barrel and tank to build texture while keeping the line clean. The goal is definition, not ornament.
Since the move into organic conversion in the late 2010s, the philosophy has tightened further: fewer inputs, more attention to detail.
